Japanese Pickled Cucumber & Onions

This simple, Japanese quick pickled cucumber and onion recipe is easy to make at home and is fantastic on a smoked salmon and cream cheese bagels. Made with Mizkan Rice Vinegar, which has a soft, umami-rich tang, it's an instant crowdpleaser! The recipe below is one of our ways to enjoy this delicious combination...

  • 1 bagel, halved and toasted
  • 2 tbsp cream cheese (one for each bagel half)
  • ¼ side of smoked salmon, thinly sliced
  • 1 medium cucumber, ribboned
  • 1 small red onion, thinly sliced
  • 150ml Mizkan Rice Vinegar
  • 1tsp salt
  • 1tsp sugar
  • Lemon wedge, to serve
  • Fresh dill, to garnish
  • Capers, to garnish
  • Ground black pepper, to garnish
  1. To make the pickle, mix the sugar and salt with the vinegar until dissolved, pour the liquid over the cucumber and onion. Leave to pickle for at least 10 minutes before using.
  2. Spread the cream cheese on the bagel.
  3. Add the smoked salmon followed by the pickled cucumber and onion.
  4. Garnish with capers, dill, and black pepper. Serve with the lemon wedge. Enjoy!
