Matazaemon Nakano, the first of seven Matazaemon Nakanos that will follow him (see below), a sake brewer from Handa, visits Edo (now Tokyo) and discovers the rising popularity of vinegar‑seasoned sushi. Inspired, he experiments, creating vinegar by fermenting sake lees, a byproduct of the sake-making process. It’s a daring innovation at the time, and lays the foundation for what will become the Mizkan we know today.

1811

Recognizing the demand in Edo, Matazaemon Nakano I opens Mizkan’s first vinegar brewery in Handa. This allows him to scale up production of his sweet, umami‑rich vinegar— truly cementing the roots of the business in sushi culture.

1887

The distinctive Mizkan logo, inspired by the Nakano family crest, is officially registered. The logo’s iconic lines symbolise taste, tang, and aroma, and the circle underneath represents the harmonious balance of all three in Mizkan products.

Mizkan takes its first steps beyond Japan by exporting its vinegar to the United States, marking the start of Mizkan’s global ambitions.

1986

Mizkan opens the “SU‑no‑SATO” Vinegar Museum in Handa, Japan’s first comprehensive vinegar museum, sharing the story and artistry behind Mizkan’s heritage. The site will become the Mizkan Museum in 2015.

1994

Mizkan launches its iconic Rice Vinegar in the UK and Europe, marking the brand’s entry into Europe.

2021

Yuko Nakano becomes Mizkan’s CEO. She is the ninth generation of the Nakano family to continue Mizkan’s rich heritage.

2025

Mizkan launches its new range of easy-to-use Japanese products into UK supermarkets, giving you the chance to enjoy a delicious taste of Japan, over 220 years in the making, at home.
